This baby potato roast recipe is an easy, addictive with a handful of ingredients. It tastes amazing with rice or grilled fish or chicken. Try this recipe and I’m sure it will be in your menu for any occasion.

Baby Potato Roast

Each one of us has a favorite potato dish. Be it a curry or stir fry or an appetizer, we love potatoes in any way. You can try my appetizer  Potato/ Onion bhaji or  5 ingredients Roasted Garlic Potato Wedges .

This baby potato roast is a simple, easy but delicious recipe. You need just a handful of ingredients from your pantry. This is the Indian style of roasting potatoes. You can have this as an appetizer or taste best as a side dish along with rice with Okra Curry, Pineapple Rasam or Kollu Rasam.

How to roast baby potato

I used medley baby potatoes to make this roast. So you can see purple and golden baby potatoes. Microwave potatoes or cook for 10 minutes in boiling water. Then marinate with spices for at least 10 minutes before roasting in a pan. You can add or avoid onions but I recommend adding it as the caramelized onions give a bit of sweetness to the dish.

Baby potato roast recipe

INGREDIENTS

Baby Potatoes – 1/2 lbs

Onion – 1/4 cup chopped

Turmeric Powder – 1/4 tsp

Red Chili Powder – 3/4 tsp

Cumin Powder – 1/2 tsp

Asafoetida – a generous pinch

Mustard Seeds – 1/2 tsp

Channa dal – 1/2 tsp

Curry leaves – few

Salt – as required

Oil – 2 tsp

METHOD

  • Microwave baby potatoes for 10 minutes. Alternatively, you can partially cook in boiling water on the stovetop.
  • Peel the skin and prick the potatoes with a fork or toothpick. Cut the potatoes if any are bigger.
  • Add spice powders to potatoes and let it sit for at least 10 minutes.
  • Heat oil in a pan.Crackle mustard seeds and add channa dal.
  • When channa dal turns golden add chopped onions and curry leaves.
  • Once the onions turn translucent, add the marinated potatoes.
  • Let it cook on medium flame. Add the required salt.
  • Stir potatoes occasionally. Cook till the potatoes turn golden.
  • Serve with rice.

NOTES

  1. Adjust red chili powder as per your requirement.
  2. Pricking the potatoes helps the spice to blend inside the potatoes.

Ingredients

  • 1/2 Lbs Baby Potato
  • 1/4 Cup Onions Chopped
  • 1/4 Tsp Turmeric powder
  • 3/4 Tsp Red chili powder
  • 1/2 Tsp Cumin Powder
  • 1/2 Tsp Mustard Seeds
  • 1/2 Tsp Channa Dal
  • Asafoetida Generous pinch
  • Salt As required
  • 2 Tsp Oil
  • Curry Leaves Few

Oh, do skinny chips count as potatoes because I would say they didn’t… which means shock horror I do know someone who doesn’t like potatoes!!!     Hi Lathiya,
    all time favorite of my daughter. She loves to take it to the school in her lunch box, I never tried purple potato as I rarely get them here. A perfect side dish for quick lunch. lovely clicks as usual.
