I here give you my newfound love for breakfast – Chia Pudding with Coconut Milk. Not one but in 2 ways. I know what you think. It’s cool, right?

Two bowls of vegan chia pudding with fresh cut fruits.

Breakfast Chia Pudding

Chia seeds are my new favorite. I have already tried Pumpkin Chia Seed Pudding. From then, I started to include it in my diet. I love to have this Chia Pudding for my breakfast. But you can have it for breakfast or a snack. It is very handy on quick or busy mornings. I soak chia seeds along with coconut milk and honey at night. The next day, at the time of breakfast, I don’t have to bang my head for ideas. Just adding the fruit purees, gives each person a favorite breakfast.

Making Chia Pudding is so easy that even your kids can do that for you. Just add 3 Tbsp of Chia seeds in 1 cup of coconut milk and sweetener of your choice. Stir well. Leave it at least for 2 hours at room temperature or overnight in the refrigerator. At the time of breakfast, add fruit puree. Delicious and healthy breakfast chia pudding ready to devour.

This chia pudding with coconut milk is a creamy, healthy breakfast or snack. Just chia seeds soaked in coconut milk until thick and pudding-like, great with fruit or sweet toppings.

I haven’t tried making chia pudding but I think I really should. Love that it’s possible to change the fruit puree to whatever is in season or according to preference!
