Kovaika / Ivy gourd is a humble vegetable. I am not sure how many know the health benefits of this vegetable. This is rich in Beta – carotene. Ivy gourds are sometimes recommended for diabetic patients.

Kovakkai fry
I haven’t used this vegetable while I was in India. However, after coming to the US, I saw a large number of Indians buy this while visiting Indian stores. So thought of giving it a try.
Once I made a stir fry. Even though it was good but not sure a hit. But considering the health benefits of Ivy gourd, I consider trying again in a different way. This time I made it a crispy fry more similar to my Okra fry. This time it was a super hit. I tell this because my little son was eating it side by side as I was making it. When I turned to see the quantity getting less as I was making, it was my little one eating it quietly from the plate. At that time I made sure that it is a keeper.

How to make kovaikkai fry crispy
This crispy kovakkai fry requires only a few ingredients. The only time-consuming part is cutting the vegetables. Once it is done then everything can be done fast. The spices, you can adjust them as per your needs. This kovakkai fry goes well with Sambar rice Rasam rice or Curd rice. Or you can eat it as a snack as my son do…lol.

Method
Cut the ivy gourd into strips. Mix all ingredients except oil in a bowl. Keep aside for 10 minutes. In a deep fry pan, add the required oil to the deep fry. When the oil is hot enough, fry the Ivy gourd mixture in batches till golden brown. Serve warm.

INGREDIENTS
Kovakkai / Ivy gourd – 2 cups cut into thin strips
Turmeric powder – 1/2 teaspoon
Red chili powder – 1 1/4 teaspoon
Cumin Powder – 1/4 teaspoon
Besan / Chickpea flour – 3/4 cup
Rice flour – 2 teaspoon
Lemon juice – 1/2 teaspoon
Oil – to deep fry
Salt – as required
METHOD
- Mix all ingredients except oil in a bowl.

- Keep aside for 10 minutes.
- In a deep fry pan, add the required oil to deep fry.
- When the oil is hot enough, fry the Ivy gourd mixture in batches till golden brown.
- Serve warm.
NOTES
- This should be served warm. If cooled down, will become soggy.
- Adjust spice powders as per your taste.
