Indian mashed potato, commonly known as Aloo Bharta in hindi or potato podimas in tamil, is a vegan comforting dish that finds its place in the heart of Indian cuisine.

In potato podimas, the potatoes are seasoned with spices, often including cumin, mustard seeds, turmeric, and green chilies, creating a tantalizing blend that awakens the senses. The addition of aromatic ingredients like garlic, ginger, and fresh coriander infuses the mashed potatoes with a lip-smacking flavor. Often enjoyed as a side dish, accompaniment to flatbreads, or as a stuffing for aloo paratha, bread roll, or samosa.

Method
You need just 15 minutes to make this dish from start to end. Pressure cook the potatoes. Peel and mash the potatoes with your hands. Let there be chunks, not mashed smooth. Saute it with chopped onions, spices, and grated coconut. Adding coconut is optional though I would highly recommend it.

INGREDIENTS
Potato – 3 medium-sized
Onion – 1/2 cup chopped finely
Ginger Garlic Paste – 1 teaspoon
Mustard Seeds – 1/2 teaspoon
Channa Dal – 1/2 teaspoon
Grated Coconut – 3 Tablespoon
Turmeric powder – 1/4 teaspoon
Red chili powder – 1 teaspoon
Curry Leaves – few
Cilantro – few
Oil – 2 teaspoon
Salt – As required
METHOD
- Pressure cook potatoes 3 or 4 whistles. Alternatively, you can cook potatoes in an Instant Pot for 10 minutes. Then the pressure is released naturally.
- Peel the skin and mash it coarsely.
- Heat oil in a pan. Crackle mustard seeds.
- Add channa dal. When it turns golden, add finely chopped onions and curry leaves.
- When the onion turns translucent, add ginger garlic paste and saute till the raw smell goes. Then add turmeric powder and red chili powder.
- Add mashed potatoes and saute till the spices are coated well.
- Add the required salt and grated coconut.
- Switch it off.
- Serve along with rice and your favorite curry.

- Instead of red chili powder, you can add chopped green chili or dry red chili.
