Cauliflower Capsicum stir fry is an easy side dish you can make with minimal ingredients. It goes well with rice or makes it a filling for your wraps. This is vegan and gluten-free.

Cauliflower Capsicum stir fry
As I said, this is so easy to make and can be used as a side dish or filling. The ingredients can be customized which I have given in the variation. I love to have it along with sambar and rice.

How to make
When I say chop cauliflower thinly, break the florets and cut them into half. If it is big, floret cut it into three lengthwise. Heat a heavy-bottomed pan and add oil. Saute onion and ginger garlic paste till the raw smell goes. Add the spice powders and let the raw smell go. Add cauliflower florets and mix it. Do not cover it as the cauliflower becomes soggy. When the cauliflower is cooked halfway, add the thinly sliced capsicum. Mix it and let it cook till the cauliflower becomes soft. Add the required salt. Serve with rice or roti.
Variations
- Instead of cauliflower, you can add potatoes.
- Add green peas for cauliflower. If using fresh green peas add directly, if dried then soak overnight and cook it separately before starting these steps.

Recipe with stepwise instructions
1Cup – 240ml 1Tbsp – 15g 1Tsp – 5g
Ingredients
Cauliflower – 1 cup chopped thinly
Capsicum – 1 chopped thinly
Onion – 1/2 cup chopped thinly
Ginger garlic paste – 1 tsp
Turmeric powder – 1/2 tsp
Red chili powder – 1 tsp
Garam masala – 1/2 tsp
Salt – as required
Oil – as required
Method
- Heat oil in a pan and add onions. When it turns golden add ginger garlic paste and sauté till the raw smell goes.
- Then add all spice powders and stir for a minute.
- Add cauliflower, and stir gently.
- Do not cover. That makes cauliflower soggy. Cook on medium flame.
- When it’s half done, add capsicum and stir.
- Add salt. Drizzle oil if necessary.
- Serve warm with rice or roti.
