Corn Cucumber Salad
So I recently started having Salad for my breakfast when I have to make only for myself. And my newfound love is this Corn Cucumber Salad. I started buying Cucumbers to make especially this salad. As with most of the salads, this is too easy to make. For the dressing, I don’t use any fancy dressings. Just add simple spices with a hint of lemon juice makes this salad a great breakfast.

Health benefits of corn, cucumber, and carrots.
Corn
Corns have a fair share of proteins and carbs. Sweet corn is rich in vitamins like Folate, vitamin B6, and potassium.
Cucumber
Cucumber is high in nutrients and antioxidants. It promotes hydration. It may help in weight loss and reduce blood sugar.
Carrot
Carrots are a good source of vitamins and minerals. It has soluble fibre which helps to reduce blood sugar levels.

How to make corn and cucumber salad
As I said earlier, making salads is easier. The only thing that needs time is chopping. Use a food processor to make the chopping part easier. Just chop the veggies and add the jeera powder, and salt with a dash of lemon juice. The delicious Corn Cucumber Salad is ready to relish. I like to have this for breakfast, lunch, or dinner. I used Corn, Cucumber, and Carrot. Hence I fondly call this 3C Salad.

Cucumber corn salad recipe
INGREDIENTS
Corn Kernels – 1/4 Cup
Cucumber – 1 Small
Carrot – 1 Medium-sized
Cumin Powder – 1/4 tsp
Salt – As required
Lemon Juice – 1/2 Tsp
METHOD
- Peel the skin of veggies if you prefer. Cut the cucumber and grate the carrot.
- Microwave corn kernel for a minute.
- Add the veggies to corn and add cumin powder.
- Add lemon juice.
- Serve.
NOTES
- If you don’t have cumin powder, just dry roast a tsp of cumin and grind it to powder. You can store this in an airtight container for later.
