Are you a salad lover? Do you prefer salad for breakfast or lunch? Then you have to try this Peanut Mango Salad. It’s vegan, gluten-free, protein-rich, simple and filling.

Peanut Mango Salad
I have recently started including salads in my diet. Previously I have shared my Corn Cucumber salad, raw papaya salad, and sprouts salad, which I love the most. I tried this Peanut Salad with my favorite mango and I loved it instantly. The dressing of this salad is simple, nothing fancy. I hope you will also love this.

How to make a Peanut Salad with Mango?
In this salad, I use boiled peanuts. So you soak raw peanuts in water for 15 minutes and pressure cook with salt till 2 whistles. Then strain it. Add chopped mangoes and onions. Add spice powders. Adjust spices as per your requirements. Squeeze lemon and add chopped mint leaves to add flavor. Serve.

My peanut salad is a contribution to this event. Though many of us have thought (including me) of peanut as a nut, it is indeed a legume. (fact source – Wikipedia)

What a great idea. I have never made peanut salad before but I think the mango would go so well with it, especially with a little kick from the chili powder.
