Peanut Mango Salad

I have recently started including salads in my diet. Previously I have shared my Corn Cucumber salad, raw papaya salad, and sprouts salad, which I love the most. I tried this Peanut Salad with my favorite mango and I loved it instantly. The dressing of this salad is simple, nothing fancy. I hope you will also love this.

How to make a Peanut Salad with Mango?

In this salad, I use boiled peanuts. So you soak raw peanuts in water for 15 minutes and pressure cook with salt till 2 whistles. Then strain it. Add chopped mangoes and onions. Add spice powders. Adjust spices as per your requirements. Squeeze lemon and add chopped mint leaves to add flavor. Serve.

Let’s discuss the ingredients

Peanuts – Peanuts are legumes though it has characteristics of nuts. They are a good source of dietary protein which helps in growth and development.

Mango – I added mango as I love it. You can adjust the quantity of it.

Recipe for Peanut Mango Salad

Ingredients

Raw Peanut – ½ cup

Mango – ½ cup sliced

Onion – ¼ cup sliced

Lemon juice – 1 tsp

Red chili powder – ¼ tsp

Salt – as required 

Cumin powder – ⅛ tsp

Mint leaves – a few chopped ( optional)

Method

  • Soak peanuts in water for 15 minutes. Then pressure cook it with salt for 2 whistles.
  • Once the pressure is released, strain the peanuts. Let it cool down.
  • After cooling down, add all other ingredients and mix gently. Adding mint leaves is optional. As my husband didn’t like its flavor, I added it to my bowl alone.
  • Serve.

Ingredients

  • 1/2 Cup Raw peanuts
  • 1/2 Cup Mango Sliced
  • 1/4 Cup Onion Sliced
  • 1 Tsp Lemon Juice
  • 1/4 Tsp Red Chili powder
  • 1/8 Tsp Cumin Powder
  • Salt As required
  • Mint leaves optional

    I am loving this salad with mango, peanut, mint and to give the kick a bit of chilli. Hitting all the right boxes to tantalize your taste buds as well making it a filling dish. Awesome.

    Absolutely I am! I mean who doesn’t love a good, healthy, tasty salad, right? I would say I prefer salads for lunch but it depends. Either way, I would love to try this delicious peanut mango combo!

    This looks so simple and tasty, but I don’t know how I’d measure the time it takes for two whistles. 5 minutes each, or any other time suggestions you can make?

      The two whistles I mean in Indian pressure cooker. You can cook peanuts for 10 to 15 minutes. Hope you try this. Thank you
