This egg curry is a mild coconut-based curry that is absolutely easy to make. A bowl of this egg curry served with paratha, roti, or jeera rice is a real comfort food on winter nights.

Curry is an essential part of Indian cuisine. I have already shared some best Indian curry recipes. This egg curry is one of the easiest and kid-approved ones. The spice level can be adjusted as per your preference. I would suggest adding slit green chili to add the flavor. The curry is coconut-based and with this curry on the side, I bet you will lose the number of rotis you have.

Method
Before starting to make this curry, make hard-boiled eggs. Check out my Instant Pot hard boiled eggs to make perfect eggs for the curry.
Grind the coconut, ginger, and garlic with whole spices to a smooth paste with the required water. Heat oil in a pan and temper mustard seeds. When mustard seeds crackle add onions and sauté. When it becomes translucent add tomato. Add all the spice powders and sauté till tomatoes become mushy. Then add the ground coconut paste and the required water. Let it boil. Add half-cut eggs and salt. Let it boil till requires consistency. Add coriander leaves and switch off. Serve warm with roti/ paratha.

Indian egg curry recipe
Ingredients
Eggs – 2 hard-boiled
Onion – 1/2 chopped thinly
Tomato – 1 medium-sized chopped
Turmeric powder – 1/4 teaspoon
Red chili powder – 1 teaspoon
Coriander powder – 2 teaspoon
Salt – as required
Coriander leaves – few
To grind
Coconut – 1/4 cup grated
Ginger – ½ inch
Garlic – 2
Fennel seeds – 1/2 teaspoon
Cumin seeds – ½ teaspoon
Cinnamon stick – a small piece
Cloves – 2
Khus khus – 1/4 teaspoon
To temper
Oil – 1 1/2 teaspoon
Mustard seeds – 1/2 teaspoon
Curry leaves – few
Method
- Grind all the ingredients under ‘to grind’ to a smooth paste.
- Heat oil in a pan and temper items under ‘to temper’.
- When mustard seeds crackle add onions and sauté.
- When it becomes translucent, add tomato.
- Add all the spice powders and sauté till tomatoes become mushy.
- Then add ground coconut paste and the required water.
- Let it boil. Add half-cut eggs and salt.
- Let it boil till requires consistency.
- Add coriander leaves and switch off.

- Heat oil in a pan and temper items under ‘to temper’.
