Mixed Vegetable White Kurma
This vegetable kurma is a medley of assorted vegetables cooked in a luscious coconut-based gravy. What sets it apart from other curries is its distinct white color, achieved by using a base of coconut, cashew nuts, and whole spices instead of the typical tomato-based or red chili-based gravies. Its mild spiciness and creamy consistency make it suitable for a wide range of palates, making it a crowd-pleaser at family gatherings and potluck dinners.

How to make Mixed Vegetable White Kurma
Ingredients Used

Stovetop Method
The only time-consuming part of making this is chopping the vegetables. Once it is done, this can be done within 30 minutes. Just saute the vegetables and cook them in the ground coconut. That’s it.
I used an Indian pressure cooker to make this. But you can make it in a pot also. In that case, cooking time differs. The vegetables also can be of your choice. You can increase the spicy level if you like by adding more green chilies. This mixed vegetable white kurma usually goes well with Vegetable Pulao, Appam, and Roti.
Instant Pot Method
Switch on the Instant Pot and press the saute button. Add oil, bay leaf, and cardamom. Add chopped onion and green chili. When the onion turns translucent add the chopped vegetables and saute’. Saute for 2 minutes and add ground coconut paste with the required water. Add the required salt and close the lid. Press cancel and then the pressure cook button. Set the timer to 6 minutes. Once done, let the pressure release naturally. Open and garnish with cilantro.

White Kurma Recipe
INGREDIENTS
Mixed vegetables – 2 cups chopped ( I used potato, sweet potato, carrots, peas, cauliflower)
Onions – 1/2 cup chopped
Green Chili – 2 Slit lengthwise
Bay Leaf – 1
Cardamom – 2
Oil – 1 tsp
To Grind
Coconut – 1/2 cup
Cashew nuts – 2 tbsp
Cinnamon stick – 1/2 inch
Cloves – 2
Fennel Seeds – 1/2 tsp
Khas Khas – 1/2 tsp
Ginger – 1 inch
Garlic – 2 cloves
METHOD
Stovetop method
- Grind all ingredients under the ‘To Grind’ lists to a fine paste with the required water.
- Heat oil in a pressure cooker pan. Add Bay leaf and cardamom.
- Add chopped onion and green chili.
- When the onion turns translucent add the chopped vegetables and saute’.
- Saute for 2 minutes and add ground coconut paste with the required water.
- Add the required salt and close the lid.
- Cook till the 3 whistles or until vegetables are cooked.
- Open the lid when the pressure is gone.
- Serve along with Pulao, roti, chapathi, paratha.
