Pukhlein, the recipe we are going to see today is from Meghalaya. It is a rice flour snack and needs just two ingredients. Surprised? Read ahead.
Meghalaya Cuisine – cooking challenge
This month, in our FB group Shhh Secretly cooking challenge theme is to cook from Meghalaya. Meghalaya is a North Eastern Indian state. The Meghalaya cuisine has three different distinct styles of cooking, Garo, Khasi, and Jaintia. The Pukhlein recipe is from the Khasi style. They mostly use rice in their diet.
In our challenge, we are paired with another fellow blogger, and we each share secret ingredients that other people in the group don’t know. Once we share the recipe photo, the others start guessing the secret ingredients, How fun it is, right? This time I’m paired with talented and lovely blogger Vidya Narayan from Masala Chilli. What is Pukhlein
Pukhlein is a popular deep-fried rice flour snack in Meghalaya. Interestingly this Pukhlein tastes similar to our Kerala delicacy Nei Appam or Tamil Nadu’s Athirasam.
This dish has only two ingredients. It is rice flour and jaggery. See, how smartly I used my ingredients, lol. It is crispy outside and crumbly inside.
How to make Pukhlein
As I said, Pukhlein needs just two ingredients. We start with making jaggery syrup. Then add rice flour to jaggery syrup and cook to form a non-sticky mass of dough. Make patties with the batter and deep fry. Serve warm. It makes a great combo to have along tea.
Tips to make Pukhlein
The batter is so soft. So be careful when you deep fry. The patties tend to break when you flip. I used two spatulas to flip it carefully.

Pukhlein recipe
Ingredients
Rice flour – 1 cup ( see notes)
Jaggery Syrup – ½ Cup
Oil – to deep fry
Method
- Check this post to see how to make jaggery syrup.
- Then add jaggery syrup to a pan and heat it.
- When it starts to boil, add rice flour slowly and mix simultaneously.
- Mix till it forms the non-stick mass. Remove from heat.
- Heat oil in another pan.
- Take a small portion of the rice flour batter and flatten it as patties.
- Drop the rice flour patties slowly into the hot oil.
- When one side is cooked to a golden brown, carefully flip it to the other side and cook till done.
- Repeat the same with the remaining batter.
- Serve warm.








Notes
- When you start mixing the rice flour, add it slowly. You will not need a whole cup of flour. It depends on the quality of the flour.
- If you are using store-bought rice flour, dry roast it slightly before adding it to jaggery syrup.
- Cook pukhlein on a medium flame. If not the outer layer will burn fast and the inside will not be cooked.

Loved the dessert Lathi. This sounds and looks very similar to Athirasam of the South India but with fewer ingredients and less cook time. I don’t think this dessert would last for a long time at my place. It would be over before we realise.
