Coming to today’s recipe, it’s a simple, yet healthy and tasty dish. This is one staple food in Kerala. It can be had in different ways. Plain cooked, stir fry, with fish or chicken or we can even make biryani. Yes, I’m talking about Tapioca stir fry/ Kappa stir fry.

Tapioca Stir Fry
Tapioca stir fry/ Kappa and Meen pollichathu is a divine combination. It is a traditional dish from Kerala and is the most popular one to try when one visits the place. Here I present simple Kappa stir fry. You can have this for breakfast or dinner or as an evening snack. I explain how to cook Tapioca in Instant pot in this post. You can make perfect cooked yucca every time. Try this yucca stir fry with Kerala mathi curry.

How to cook tapioca in Instant pot
Cut the peel of the tapioca and wash it thoroughly in clean water. Cut into two or three parts horizontally. Pour a cup of water in the pot and place the steamer. Place the cut yucca roots in the steamer. Close the lid and set the cook time to 20 minutes. Once done, let the pressure release naturally. Open the lid and use the yucca root as you prefer.

How to make Tapioca stir fry
Once the tapioca is cooked in an Instant pot, remove it from the steamer and cut it into cubes. Heat oil in a pan. Add mustard seeds and chana dal. Once the mustard seeds splutter, add chopped onions and curry leaves. When it turns translucent, add the red chili flakes and the required salt. Mix it and add cubed tapioca. Stir fry for two minutes and switch off. Serve warm as such or with a Kerala fish curry

Instant pot Tapioca Stir Fry recipe
Ingredients
Kappa / Tapioca/ Yucca root – 1 medium-sized
Onion – 1/2 cup chopped
Red chili flakes – 1 Tsp
Turmeric powder – 1 tsp
Curry leaves – few
Chana dal – 1 tsp
Mustard seeds – 1/2 tsp
Salt – as required
Oil – 1 tsp
Method
- Peel off the skin of tapioca. Cut into half and cook in Instant Pot in the manual for 20 minutes.
- When it’s done, let the pressure release naturally. Cut tapioca into small cubes.
- Heat oil in a pan. Crackle mustard seeds, and add chana dal.
- When it turns golden, add onions and curry leaves.
- Stir till onions turn transparent. Then add red chili flakes and cooked tapioca. Add the required salt.
- Serve warm.


Notes
- You can serve this as such or with fish or chicken curry.
- You can add grated coconut too.

Ingredients
- 1 Kappa / Tapioca/ Yucca root medium-sized
- 1/2 Cup Onion chopped
- 1 Tsp Red chili flakes
- 1/2 Tsp Turmeric powder
- Curry leaves few
- 1 Tsp Chana dal
- 1/2 Tsp Mustard seeds
- Salt as required
- 1 Tsp Oil
