White vegetable kurma is a delectable and creamy South Indian dish that tantalizes the taste buds with its rich flavors and wholesome goodness. This aromatic dish is a staple in South Indian cuisine, known for its unique blend of vegetables cooked in a luscious white coconut-based gravy. Fragrant spices and herbs like cinnamon, cloves, cardamom, and cilantro are expertly combined to infuse the kurma with a harmonious blend of tastes and aromas. Whether enjoyed with steamed rice, roti (Indian flatbread), or dosa, white vegetable kurma is a versatile dish that can be savored during both casual meals and festive occasions.

Mixed Vegetable White Kurma
This vegetable kurma is a medley of assorted vegetables cooked in a luscious coconut-based gravy. What sets it apart from other curries is its distinct white color, achieved by using a base of coconut, cashew nuts, and whole spices instead of the typical tomato-based or red chili-based gravies. Its mild spiciness and creamy consistency make it suitable for a wide range of palates, making it a crowd-pleaser at family gatherings and potluck dinners.

How to make Mixed Vegetable White Kurma
Ingredients Used

Stovetop Method
The only time-consuming part of making this is chopping the vegetables. Once it is done, this can be done within 30 minutes. Just saute the vegetables and cook them in the ground coconut. That’s it.
I used an Indian pressure cooker to make this. But you can make it in a pot also. In that case, cooking time differs. The vegetables also can be of your choice. You can increase the spicy level if you like by adding more green chilies. This mixed vegetable white kurma usually goes well with Vegetable Pulao, Appam, and Roti.
Instant Pot Method
Switch on the Instant Pot and press the saute button. Add oil, bay leaf, and cardamom. Add chopped onion and green chili. When the onion turns translucent add the chopped vegetables and saute’. Saute for 2 minutes and add ground coconut paste with the required water. Add the required salt and close the lid. Press cancel and then the pressure cook button. Set the timer to 6 minutes. Once done, let the pressure release naturally. Open and garnish with cilantro.

This kurma looks mouthwatering. Would it be yummy without coconut? Maybe I could use cashew nuts instead of the coconut. 🙂

Being Punjabi, coconut is not a regular item in our home, Can I make it with desiccated coconut. If not, then next time I know what to make with that leftover coconut instead of making coconut chutney 🙂 So I have option now
Ya you can try using dessicated coconut though there will be difference in taste… Thank you dear 😊
I rarely make white sauce gravies but should do more often, your recipe looks so rich and creamy.
