Fall weather is slowly creeping in and all we need is some comforting, heartwarming soup. So here is Vegan Pumpkin Carrot soup made in Instant pot. Why wait? Just plug in your Instant pot and learn to make this delicious, silky smooth soup.

Vegan Pumpkin Carrot Soup

I haven’t shared much of soup recipes in my space but just 3 ingredient tomato soup for vegetarians and chicken soup for chicken lovers. I love smooth-blend soup more than chunky ones. So here is my other contribution to it.

Pumpkin is in the season, so I decided to make pumpkin soup with carrots and ginger to add nutritional benefits and taste. I made this soup in Instant Pot to make the work easier. This is a smooth and delicious soup. I haven’t used any cream but you can always go ahead and use cream to make this soup rich. In addition, you can also cook the vegetables in vegetable broth.

How to make Pumpkin Carrot soup in Instant Pot

Like said, I made this pumpkin soup in Instant Pot to make the work easier. You just need to dump all ingredients in the pot, add water or vegetable broth, and cook in the manual for 10 minutes. Once the vegetables are cooked, let the pressure release naturally. Open the lid, use an immersion blender, and blend the cooked vegetables. Add salt and pepper to season and serve warm with some toasted garlic bread.

Let’s discuss the ingredients

Pumpkin – Pumpkin is rich in vitamin A and antioxidants. Packed with vitamins, it can boost your immune system.

Carrot – Carrots as all know, are rich in vitamin A and fiber. It helps in weight reduction.

Ginger – Ginger has many medicinal properties. It helps indigestion. 

Chunks of pumpkin, carrot and ginger.

Can I freeze this soup?

Yes, you can freeze this soup. Thaw it and reheat it before serving.

Recipe to make Pumpkin carrot soup with stepwise instructions

Ingredients

Carrot – 2 large or 1 Cup chopped

Pumpkin – 1 cup peeled and chopped

Ginger – 1 tbsp peeled and chopped

Water – 2 Cups

Salt – as required

Pepper – As required

Method

  • Take all ingredients inside the Instant Pot except salt and pepper.
  • Close the lid. Press manual and cook time for 10 minutes.
  • Once it is cooked, let the pressure release naturally.
  • Open the lid and using an immersion blender, blend it till smooth.
  • Serve warm in a bowl with salt and pepper to season.
